Anti-Inflammatory Turmeric Chicken Rice (Printable Version)

# Ingredient List:

→ Chicken

01 - 1.1 lbs boneless, skinless chicken thighs or breasts, cut into bite-sized pieces
02 - 1/2 teaspoon salt
03 - 1/4 teaspoon black pepper

→ Vegetables

04 - 1 medium onion, finely chopped
05 - 2 cloves garlic, minced
06 - 1 tablespoon fresh ginger, grated
07 - 1 medium carrot, diced
08 - 1 cup baby spinach or kale, chopped

→ Rice

09 - 1 1/2 cups long-grain white or brown rice, rinsed
10 - 3 cups low-sodium chicken broth

11 - 1 1/2 teaspoons ground turmeric
12 - 1/2 teaspoon ground cumin

# How to Make:

01 - Season chicken pieces evenly with salt and black pepper
02 - Heat olive oil in large pot or deep skillet over medium heat. Add chicken and sauté 3–4 minutes until lightly browned. Remove and set aside
03 - Add onion, garlic, and ginger to same pot. Sauté 2–3 minutes until fragrant and translucent
04 - Stir in carrot and cook 2 minutes until slightly softened
05 - Add turmeric, cumin, coriander, paprika, cinnamon, and red pepper flakes. Stir to coat vegetables and release aromas, about 1 minute
06 - Add rice and mix well, ensuring each grain is coated with spice mixture
07 - Pour in chicken broth, bring to boil, then reduce to simmer
08 - Return chicken to pot, cover, and cook 18–20 minutes for white rice or 35–40 minutes for brown rice until rice is tender and liquid absorbed
09 - In last 5 minutes of cooking, stir in spinach or kale until wilted
10 - Remove from heat, let rest covered 5 minutes, then fluff with fork
11 - Top with fresh herbs and serve with lemon wedges
