01 - Preheat your oven to 350°F. Lightly grease four small oven-safe ramekins or bowls with cooking spray or a small amount of butter.
02 - In a large mixing bowl, combine the cottage cheese, milk, honey or maple syrup, vanilla extract, lemon zest, and salt. Whisk or stir vigorously until completely smooth and creamy.
03 - Stir in the rolled oats and chia seeds until evenly distributed throughout the mixture. Let stand for 2-3 minutes to allow the oats to soften slightly.
04 - Gently fold in 3/4 cup of the blueberries, being careful not to crush them. Reserve the remaining berries for topping.
05 - Divide the mixture evenly among the four prepared ramekins, filling each about 3/4 full. Top each ramekin with the reserved blueberries.
06 - Place the ramekins on a baking tray and bake for 25 minutes, or until the tops are set and lightly golden brown.
07 - Remove from the oven and let cool for 5 minutes. Top with toasted nuts and an extra drizzle of honey or maple syrup if desired. Serve warm.
