01 - 1 lb ground beef

→ For the Rice

13 - 1 1/4 cups long-grain white rice
14 - 2 cups water
15 - 1/2 tsp salt
16 - 1 tbsp lime juice
17 - 2 tbsp fresh cilantro, chopped

19 - 1/2 tsp ground cumin
20 - 1/2 tsp chili powder

# How to Make:

01 - Combine rice, water, and salt in a medium saucepan. Bring to a boil over high heat, then reduce to low, cover, and simmer for 15 minutes until water is absorbed. Remove from heat and let stand covered for 5 minutes. Fluff with a fork and stir in lime juice and chopped cilantro.
02 - Heat olive oil in a large skillet over medium heat. Add chopped onion and cook for 3 minutes until softened. Add minced garlic and cook 1 minute more. Add ground beef, breaking apart with a spoon, and brown for 5-6 minutes until no longer pink. Drain excess fat if necessary.
03 - Stir in cumin, smoked paprika, chili powder, oregano, salt, pepper, and tomato paste until well combined. Pour in broth and simmer uncovered for 5-7 minutes until sauce slightly thickens. Adjust seasoning if needed.
04 - Heat olive oil in a small saucepan over medium heat. Add drained black beans, cumin, chili powder, salt, and pepper. Cook for 3-4 minutes, stirring occasionally, until heated through and well seasoned.
05 - Divide cilantro-lime rice among four serving bowls. Top each bowl with seasoned beef, warmed black beans, shredded lettuce, cherry tomatoes, sliced avocado, shredded cheese, and a dollop of sour cream. Garnish with fresh cilantro and serve with lime wedges on the side.
