01 - 1.1 lb lean ground beef
02 - 1 tbsp olive oil
03 - 1 small onion, finely chopped

14 - 2 cups water
15 - ½ tsp salt

18 - 14 oz can black beans, drained and rinsed
19 - ½ tsp ground cumin
20 - ½ tsp chili powder
21 - Juice of ½ lime

# How to Make:

01 - In a saucepan, combine rice, water, and salt. Bring to a boil, reduce heat to low, cover, and simmer for 15 minutes or until water is absorbed. Remove from heat, fluff with a fork, then stir in lime juice and chopped cilantro. Set aside and keep warm.
02 - While the rice cooks, heat olive oil in a large skillet over medium heat. Add the onion and cook for 2–3 minutes until softened. Stir in garlic and cook for 30 seconds. Add ground beef and cook, breaking up with a spoon, until browned and cooked through (about 5–6 minutes). Drain excess fat if needed.
03 - Add chili powder, cumin, smoked paprika, oregano, salt, and black pepper to the beef. Cook for 1 minute, stirring. Stir in tomato paste and broth. Reduce heat and simmer until thickened, about 4–5 minutes. Taste and adjust seasoning if necessary.
04 - In a small saucepan over medium heat, combine black beans, cumin, chili powder, and lime juice. Stir until heated through, about 3–4 minutes.
05 - Divide rice among 4 serving bowls. Top with black beans, seasoned beef, and your choice of toppings such as tomato, avocado, lettuce, cheese, sour cream, cilantro, jalapeños, and lime wedges.
