26 - 1/2 cup sour cream
27 - 1 small red onion, thinly sliced
28 - Lime wedges, for serving
29 - Fresh cilantro leaves, for garnish

# How to Make:

01 - Rinse the rice under cold water until water runs clear. In a medium saucepan, bring water to a boil. Add rice and salt, reduce heat to low, cover, and simmer for 15 minutes. Remove from heat and let sit, covered, for 5 minutes. Fluff with a fork, stir in lime juice and chopped cilantro. Keep warm.
02 - In a small saucepan, combine black beans, cumin, chili powder, and a pinch of salt. Heat over medium, stirring occasionally, until warmed through for about 5 minutes. Set aside.
03 - Heat olive oil in a large skillet over medium-high heat. Add chopped onion and cook until softened for 2 to 3 minutes. Add garlic, cook for 30 seconds. Add ground beef, breaking it up with a spoon. Cook until browned and cooked through for 5 to 6 minutes. Drain excess fat if needed.
04 - Add chili powder, cumin, smoked paprika, oregano, salt, and pepper to the beef. Stir in tomato paste and beef broth. Simmer for 3 to 4 minutes until thickened. Taste and adjust seasoning as needed.
05 - Divide cooked rice among 4 bowls. Top each with black beans, seasoned beef, and your choice of toppings: avocado, cherry tomatoes, lettuce, cheddar cheese, sour cream, red onion, and cilantro. Serve with lime wedges.

# Expert Tips:

01 -
  • Everything cooks in one pan except the rice and beans, meaning cleanup is absolutely minimal
  • The seasoned beef tastes like it simmered for hours but comes together in under fifteen minutes
  • Everyone can customize their own bowl, so no more picking out ingredients people do not like
02 -
  • Do not skip rinsing the rice or it will turn out sticky instead of fluffy and separate
  • Let the beef mixture sit in the pan for a minute after adding the liquid so it properly thickens
  • Warm your beans gently over low heat if you make everything ahead of time so they do not dry out
03 -
  • Double the beef seasoning and freeze half for an even faster dinner next time
  • Squeeze fresh lime over the whole bowl right before eating to brighten every single component
