01 - In a medium saucepan, combine rinsed quinoa and water. Bring to a boil over medium-high heat.
02 - Reduce heat to low, cover, and simmer for 15 minutes, or until quinoa is tender and water is absorbed.
03 - Stir in milk, diced apple, cinnamon, and nutmeg. Cook for 3–5 minutes, stirring occasionally, until the apples have softened and the mixture is creamy.
04 - Remove from heat and stir in honey or maple syrup until well combined.
05 - Divide quinoa mixture between two bowls. Top with walnuts or pecans, raisins or cranberries, and extra apple slices if desired.
06 - Serve immediately while warm for the best texture and flavor.
