- Preheat oven to 350°F. Grease and line a 9x13-inch baking pan with parchment paper.
- Combine cake mix, eggs, oil, and water in a large bowl. Mix until smooth batter forms. Pour into prepared pan and bake for 25-30 minutes until toothpick inserted in center comes out clean. Cool completely.
- Beat softened cream cheese and powdered sugar until smooth and creamy.
- Crumble cooled cake into fine crumbs. Add cream cheese mixture and combine thoroughly until dough-like consistency forms.
- Scoop tablespoon-sized portions and roll into balls. Place on parchment-lined baking sheet. Freeze for 20-30 minutes until firm.
- Melt white chocolate chips with coconut oil in microwave-safe bowl. Heat in 20-second intervals, stirring between each until smooth.
- Dip each chilled cake ball into melted white chocolate using a fork. Allow excess coating to drip off. Return to parchment-lined sheet.
- Sprinkle with decorations immediately while coating is wet. Refrigerate for at least 30 minutes until coating is completely set.
