17 - 1/4 cup salsa or pico de gallo

# How to Make:

01 - Heat olive oil in a large skillet over medium heat. Add diced onion and bell pepper. Sauté for 5–6 minutes until softened and fragrant.
02 - Add the black beans, chili powder, cumin, smoked paprika, garlic powder, salt, and pepper. Stir well and cook for 2–3 minutes until heated through and aromatic.
03 - In a separate skillet, cook the eggs to your preference—fried sunny-side up, scrambled until fluffy, or poached for runny yolks.
04 - Reheat the cooked rice in the microwave or on the stovetop until steaming hot.
05 - Divide the warm rice evenly among four serving bowls. Spoon the seasoned bean and vegetable mixture over the rice in each bowl.
06 - Place one cooked egg on top of each bowl, centering it on the bean mixture.
07 - Arrange cherry tomatoes, avocado slices, jalapeño rounds, shredded cheddar cheese, and fresh cilantro around each egg. Drizzle with salsa.
08 - Serve immediately with fresh lime wedges on the side for squeezing over the bowl.

# Expert Tips:

01 -
  • Everything happens in one skillet, meaning less cleanup and more eating
  • The spice blend hits that perfect sweet spot where breakfast feels festive but not overwhelming
02 -
  • The rice should be warm or the entire bowl cools down too quickly, especially if you are cooking eggs separately
  • A runny yolk acts as a sauce, so do not overcook your eggs unless you prefer them firm
03 -
  • Use freshly ground cumin if you can find it, the flavor difference is remarkable
  • Let the bean mixture sit for a minute off the heat before serving, the flavors meld together
