A savory vegan chicken-style spice blend for rubs, marinades and broths; smoky, herby, and nutty with nutritional yeast.

# Ingredient List:

→ Dry Spices

01 - 2 tbsp nutritional yeast flakes
02 - 1 tbsp garlic powder
03 - 1 tbsp onion powder
04 - 1½ tsp dried thyme
05 - 1½ tsp dried sage
06 - 1 tsp smoked paprika
07 - 1 tsp ground turmeric
08 - 1 tsp dried parsley
09 - 1 tsp celery salt
10 - ½ tsp ground black pepper
11 - ½ tsp crushed dried rosemary
12 - ½ tsp ground white pepper
13 - ¼ tsp ground coriander
14 - ¼ tsp ground marjoram
15 - ¼ tsp ground mustard

# How to Make:

01 - In a small mixing bowl, combine all the dry spices and herbs together.
02 - Stir or whisk the mixture thoroughly until all spices are evenly distributed and no clumps remain.
03 - Transfer the seasoning blend to an airtight container and store in a cool, dark place for up to 6 months.
04 - To use as a rub, sprinkle generously over plant-based proteins such as tofu, tempeh, or seitan, and massage the seasoning in before grilling or roasting.
05 - To use as a marinade, whisk 1 to 2 tbsp of the seasoning with ¼ cup olive oil and 2 tbsp fresh lemon juice. Coat the desired ingredients and marinate for at least 30 minutes before cooking.
06 - To prepare a flavorful broth, dissolve 1 tbsp of seasoning into 2 cups of hot water and adjust the amount to taste.

# Expert Tips:

01 -
  • It transforms plain tofu or tempeh into something that actually makes you excited about dinner, no exaggeration.
  • You probably already have most of these spices sitting in your pantry right now.
02 -
  • If your nutritional yeast has been open for more than six months it may have lost its punch, and that will make the whole blend taste flat no matter what else you do.
  • Crushing the rosemary between your fingers instead of leaving it whole changes the entire aroma of the blend in a way you will notice the first time you try it.
03 -
  • Toast the blend in a dry skillet for about thirty seconds before using it as a rub, and the fragrance alone will make you question why you ever bought premade seasoning.
  • The marinade ratio of one to two tablespoons seasoning, a quarter cup olive oil, and two tablespoons lemon juice has never failed me, and I have tried at least a dozen variations.
