03 - Wipe the skillet clean and place one flour tortilla in the skillet over medium heat. Sprinkle half of the mozzarella and cheddar cheeses evenly over one half of the tortilla. Layer the beef mixture, sliced red bell pepper, and corn kernels on top of the cheese, then fold the tortilla in half to enclose the filling.
